Easy Balushahi Recipe (Badusha Sweet)

Ingredients:
For the dough:
• 1½ cups (250g) all-purpose flour (maida)
• ½ teaspoon sugar
• ½ teaspoon baking powder
• Approximately ¼ cup water
• ¼ cup (50g) ghee (clarified butter)
• ¼ cup (65g) curd (yogurt)
• Oil for deep frying
For the sugar syrup:
• 1 cup (250g) sugar
• ½ cup water
• A few strands of saffron (kesar)
• ¼ teaspoon cardamom powder (elaichi powder)
Instructions:
1. In a large mixing bowl, combine 1½ cups of all-purpose flour, ½ teaspoon sugar, and ½ teaspoon baking powder.
2. Add ¼ cup of ghee and crumble the mixture.
3. Further, add ¼ cup of curd and mix well.
4. Additionally, add approximately ¼ cup of water and start making the dough without kneading.
5. Cover the dough with a moist cloth and let it rest for 15 minutes.
6. After the dough has rested, slightly knead it.
7. Pinch small balls of dough and make a dent in the center with your thumb.
8. Deep fry the dough balls in medium-hot oil on low flame until they turn golden brown and crisp.
9. Immediately drop the fried balls into warm sugar syrup.
10. Coat the badhusha (balushahi) with sugar syrup on both sides and let it soak for 5 minutes.
11. Finally, serve the balushahi (badusha) garnished with chopped cashews.
